“Penne with Broccoli and Mozzarella” For A Meatless Meal



Welcome to “Wordless Tuesday!” Where there are no more words, just a mouth watering recipe which I know you have been waiting for….. 


 

                         “Penne with Broccoli and Mozzarella

Ingredients:


2 bunches of broccoli in cubes or florets
1 pound of Penne pasta (De Cecco Brand)
1 onion sliced
2 cloves of chopped garlic
3 tablespoons of extra virgin olive oil
3 tablespoons of butter
3/4 cup of seasoned bread crumbs
3/4 lb of fresh mozzarella cubed 

Salt & fresh black pepper to taste
1/2 cup of freshly grated Pecorino Romano cheese




Directions:

Cook broccoli until almost tender. Cook the pasta until al dente. While the pasta is cooking, use a large pan to sauté the sliced onions and garlic in olive oil with butter for about 3 to 4 minutes. Stir in the breadcrumbs and cook until they are slightly browned. Toss the cooked broccoli into the pan. Drain the pasta and toss into the broccoli mixture. Stir in the mozzarella until slightly melted. Season with salt and pepper. Plate your dish and serve topped with freshly grated Pecorino Romano cheese.   Serves: 4-6 people

  1. Comfort food at its best, Dottie! Broccoli and Macaroni was a popular Friday night dish in our house. The mozzarella just brings it over the top! Thank you so much for sharing...

      You are right, nothing like pure comfort foods. Friday nights in my childhood were always a fun night..my mom would come up with fabulous recipes that were meatless. You can also add other ingredients to this as well, if you wanted to use this for another day of the week. Like chunks of chicken, or added button mushrooms sliced. Whatever your desire.   3. I love pasta con broccoli and adding mozzarella makes it a more consistent and filling dish. Lent is starting tomorrow so 40 days to go for Easter. I must say I prefer it to Christmas. To me it has always been such a special time of the year. I love the Holy Week leading up to Easter. And let's not talk about all the baking to come. Will you make a colomba cake? I did last year and I probably will again this year. So much better than shop bought ones. X

      I can't believe that Easter is not that far away, and we still have snow and the weather is so cold. I pray that it changes so everyone can go to church in their finest Easter clothes. It is a special time and a very prayerful time as well. Yes, Holy week is so impressive. My dad always sings with his church choir for the whole week of services and then it ends with the Easter Vigil on Holy Saturday.
      Yes, this broccoli dish is really good anytime of the year. Oh, my yes, the baking. I can smell the aroma of all the goodies from now. My family did not make the Colomba di Pasqua cake. My family is from Calabria and Sicily, and we make what they call Cuzzupa. It has Anise seeds, and it is more like a cake than a bread. I will be posting the recipe as it gets closer to Easter. But your recipe sounds wonderful with the almonds. I looked it up on Wikipedia, and I see the shape. called Easter Dove. Have to check on that again... Thanks for the info...

      Thanks for the visit! You know after I posted this I thought about you, and your love of a little heat in your meals. I thought about maybe putting some red pepper flakes on top of the dish before you serve it. That may bring up the heat a little for you.

      I agree with you about broccoli, just love it, and it is so versatile. You can use it in so many delicious recipes! Yes, this time of the year is nice as it means "New Life" for everything, Trees, going outside, and flowers blooming! I hope it improves as well, you can't go out in your Easter Bonnet when it is snowing and cold.
