“Chicken Surprise Wraps” & “Almond White Chocolate Chunk Cookies” For Wordless Tuesday


Welcome to “Wordless Tuesday!” Where there is just one or two mouthwatering recipes which I know you have been waiting to try…….. 




My first recipe this week is a wrap that I created for a lunch with my sewing group. I call it “Chicken Surprise Wraps.” Everyone loves these flavorful wraps. This recipe is very easy and refreshing. It’s an enjoyable way to have a healthy and fun lunch, enjoy! 


“Chicken Surprise Wraps”

Ingredients:
2 Whole wheat or Flour Tortilla packages 12-inch Fajita size (8 count)
2 packages of Perdue Shortcuts Chicken carved breast strips (9 oz)
1 package of pre-washed spinach leaves (6 oz)
1 package of Oscar Mayer Bacon fully cooked (just heat up) (12 count)
1 bag of Diamond Sliced Almonds (2.25 ounces)
1 bottle of your favorite Ranch dressing mix
2 jars of Roasted Peppers marinated in olive oil and garlic (12 ounce)



Directions:
Spread 2 tablespoons of Ranch dressing in the center of each tortilla. Layer with the spinach leaves, a couple of strips of chicken, 2 slices of bacon, piece of roasted peppers, and then sprinkle with a hand full of sliced almonds. Roll up tightly and cut in half. Keep in refrigerator till ready to serve. Serves: 8-12 according to how much you put in them.

Almonds and white chocolate make a delicious combination in cookies. A perfect dessert after our wraps for lunch. Bake a batch for a delightful cookie platter, any time of the year.


“Almond White Chocolate Chunk Cookies”


Ingredients:
1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks unsalted butter, softened
1 1/2 cups sugar
2 eggs
1 1/2 teaspoons Pure Almond Extract
8 oz White Baking Chocolate, coarsely chopped
1 1/3 cups Diamond slivered almonds

Directions:
Preheat oven to 375°F. Mix flour, baking soda and salt in medium bowl; set aside.  Beat butter and sugar in a large bowl with electric mixer on medium speed until light and fluffy. Add eggs and extract; beat until well blended. Gradually beat in flour mixture until well mixed. Stir in chocolate and almonds. Drop by heaping tablespoonfuls 1 inch apart onto un-greased baking sheets. Bake 10 minutes or until edges are lightly browned. Cool on baking sheets 1 minute. Remove to wire racks; cool completely.

  1. Both recipes are winners, Dottie! I could easily eat 3 of each! I have white chocolate and have been meaning to make cookies with it for ages, but always forget! You've inspired me and I may even get some macadamias since my daughter will be away (she has a nut allergy as you may remember). Thank you as always! :) CC

    1. Dear Christina, Thank you for your visit tonight...I am thrilled that you loved this post and the 2 recipes. They are both winners definitely. I thought that my wrap would be a great lunch and of course, you have to have a dessert, but did not want to have anything really heavy especially when it is hot out. So these cookies kept coming to mind. I knew everyone would love them...they are incredible, I love chocolate, white or dark. Yes, I do remember that your daughter has that nut allergy, so with her away, you won't feel guilty making them. Thanks for your kind words, and again I do hope that your daughter has a wonderful experience and a safe trip. I am sure she will enjoy seeing her relatives.   2. I love wraps in particular Mexican ones. Your recipes here make me drool. I could have the wraps for dinner tonight as they are easy to prepare and super tasty. In the summer it is harder cooking especially after a long hot day.
    Your white chocolate cookies look really good too! :-)

Good Morning Dottie , love the wraps and the ingredients combine together so well , with the weather so warm we likes to eat outside in the garden on the patio , thank goodness it's covered and screened in . This is perfect , they are so easy , I will make some this afternoon , they are perfect with a salad . My girls wants to make the cookies so off the heat the kitchen .     1. Dear Nee, Good Afternoon dear friend...Thank you for your comment and for coming over...Yes, I agree these easy cool meals is what I love during the hot days. Yes, you could add a salad on the side, or a fruit bowl, I even like a cool beets salad, on the side of the wraps. Then the cookies are really heaven on earth. The cookies yes, you have to use the oven for, but it is only for about 10 minutes....Hope that your children love them..Blessings Nee and have a great week ahead...Dottie :)

    1. Dear Louise, Thanks for your visit this evening. Well, I used to belong to a "sewing group" of friends that would meet at my house every Wednesday, for lunch and "sewing." But we all did many things, like crocheting, knitting, cross stitch, embroidery, sewing, etc. We were about 8-9 women. I would make the lunch and they would chip in for the expenses. We met for about 4 years, or more. It was a lot of fun and laughs. But I had to stop it, as I became more ill and was not able to do it every week. We all keep in touch and that is a good thing. So as to your question, I do sew, but my passion is crocheting.
      Back to the ranch as they say, this recipe was one that I made up for lunch one day. I love to create new and delicious recipes. Plus I love nuts and it gives such a great texture to a dish. Thanks for your comment Louise and have a blessed rest of the week...Dottie :)
