Celebrate "National Seafood Month" With A “Zesty Shrimp Pasta” Recipe & “Luscious Lemon Squares”



****Starting on November 3rd, I will be changing “Wordless Tuesday” to “Soupy Tuesday,” for the next few months. This means that I plan on sharing with you a soup recipe for that day. As the days get cooler and eventually colder, everyone enjoys a hot bowl of soup. October is “National Seafood Month,” a time to raise awareness for fisheries and celebrate the benefits of seafood in one’s diet. My first recipe for this week is called “Zesty Shrimp Pasta” which is incredible! The combination of all of these Italian ingredients not only makes this dish very tasty but the aromas fill your home with love. So try this easy delicious pasta recipe for your family.                                                 “Zesty Shrimp Pasta

Total time: 25 min / Prep: 10 min / Servings: 6


Ingredients:
1/2 lb. Linguine, uncooked
3/4 cup prepared Good Seasons Zesty Italian 

Dressing Mix (divided)
2 cups sliced fresh mushrooms
1 large onion, thinly sliced
1 green pepper sliced
1 red pepper sliced
1 lb. uncooked cleaned large shrimp
1 Tbsp. chopped fresh parsley
1/4 cup grated Pecorino Romano cheese

Directions:
Cook pasta as directed on package meanwhile, heat 1/2 cup dressing in large skillet on medium heat. Stir in mushrooms, onions, red and green pepper, and cook 3 min or until onions are crisp-tender, stirring occasionally. Add shrimp and parsley then stir. Cook 2 min or until shrimp are pink and vegetables are tender, stirring occasionally. Now drain the pasta; return to pot. Add shrimp mixture and remaining dressing; toss lightly. Sprinkle with cheese. You can serve this with a crisp salad and a slice of Italian bread.

                                             “Luscious Lemon Squares

Prep Time: 10 minutes
Total Time: 60 minutes
Servings:25

Ingredients:
1 cup un-bleached all-purpose flour
1/2 cup un-salted butter, softened
1/4 cup powdered sugar
1 cup granulated sugar
2 teaspoons grated lemon peel, if desired
2 tablespoons real lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
Powdered sugar

Directions:
Heat oven to 350ºF. Mix flour, butter and powdered sugar. Press in un-greased square pan, 8x8x2 or 9x9x2 inches, building up 1/2-inch edges. Bake crust 20 minutes. Beat granulated sugar, lemon peel, lemon juice, baking powder, salt and eggs with electric mixer on high speed about 3 minutes or until light and fluffy. Pour over hot crust. Bake 25 to 30 minutes or until no indentation remains when touched lightly in center. Cool; dust with powdered sugar. Cut into about 1 1/2-inch squares.

Tips:
Grate only the yellow portion of the lemon; the white portion, or pith, is very bitter.
One medium lemon should give you just enough peel and juice to make these refreshing bar cookies. Make Lemon-Coconut Squares: Stir 1/2 cup flaked coconut into egg mixture in step 2.

A crisp white wine will due very nicely with this dish…Sauvignon Blanc, Pinot Grigio, Pinot Gris, Pinot Blanc, and dry sparkling wines are also especially good.

  1. Love that pasta dish, Dottie and I'm printing it now! And lemon squares are awesome, haven't had them in a while and must do something about that!

    I'm happy to hear you'll be doing soup recipes. We like soup but I seldom make it, just bean soup, vegetable beef and chili. I'd like to have a recipe for cream of broccoli soup, that would a great soup to start with. Looking forward to many soup recipes!

      Thank you for your comment..I agree so glad that you liked this post...This dish is so easy and yet so delicious and the Lemon Squares are a perfect addition to go with that shrimp dish. I make these lemon squares in the summer more, but haven't had them in a while as well..It doesn't have to be summer for lemon squares..
      Yes, I thought that soup would be a good way to keep everyone warm and cozy. Cream of Broccoli soup is so good, I love all soups and I really love the cream soups. I will definitely post a cream of broccoli soup for you..Thanks again and have a great day!

  2. Good evening dear Dottie ,
    As you know our seafood is plentiful year round . Love the ingredients in your pasta salad , I will try your take on it , but add a little more cheese . I can almost taste it now .
    The lemon squares looks divinely delicious , my girls has been come interested in cooking (11 and 12) the 12-year-old will be 13 in December . The squares look so easy , they will have fun this weekend , their brothers will clean up for them , especially Baby Boy (giggling) .
    What a great idea to have a soup day , I keep a pot of soup on the stove , everyone can get a cup of soup to warm their tummies .
    I will also do a lot of comfort food for the winter , no special days or type , just whatever we have for dinner . Casseroles , crock pots dishes , chili and soups . I am thinking of a alligator stew or soup (giggling ) .

      Thank you so much for your fun comment...You are so funny...I can imagine, especially were you are that fish and seafood are plentiful, I love shrimp in anything..and yes you always need to have more cheese..You know the line, "cheese makes everything better!!" Glad that you love the lemon squares..I enjoy the flavor of these especially with the shrimp dish, lemon always go good with that. They are easy and your girls will love to make them...Good for them that their brothers clean up!
      Yes, I can't wait to start "Soupy Tuesday"....It will be great, a nice and warm, cozy way to share soup recipes. I love your idea of the soup pot all day..I could have soup for breakfast!     3. Thank you dear Nee for that email, I don't think I would fry it either, sorry....I just can't get over the thought of it. God Bless you that you can eat it...I had frogs legs once in Florida, when i was young. But I didn't know what I was eating. My grandmother told me that it was spring chicken. I ate it and after I ate it she told me that I just had frogs legs...Well you can imagine what happened then, I tried to find the nearest bathroom....need I say more. .Good night and sweet dreams dear Nee...       I agree with you, I am going to have a cup of something hot in a little while...It is so nasty out there and it is that type of day to have a hot bowl of soup.       Thanks for your visit and comment..I agree shrimp is one of my favorite seafoods.You can make so many things with this shellfish. I remember you saying that you love lemons from other posts, but I think this goes so well with the shrimp, lemons and fish go together, and these are delicious.
