“Chicken Soup with Gnocchi, Basil and Parmesan” For "Soupy Tuesday"

Welcome to “Soupy Tuesday!” For those of you that are new to my blog…For the next few months I will be sharing a recipe for a delicious easy soup. As the days get cooler and eventually colder, everyone enjoys a hot bowl of soup. If you would like to see a special recipe for soup or have one that you want to share just email me at (

Today’s soup is called, “Chicken Soup with Gnocchi, Basil and Parmesan” I must say that this one is on the top of my “soup” list. Anything with Gnocchi and cheese is my kind of soup. Potato gnocchi, which are increasingly available at many grocery stores, make assembling this substantial soup a snap. After Thanksgiving, you are tired and this would be a perfect soup to prepare for your long holiday weekend. If you have leftover roast or grilled chicken, (even turkey)  you can use it to save even more time. Now you will have that time to get some of your Christmas Cards written, or maybe even put up your Christmas Tree. That is what I usually do on this weekend
after Thanksgiving. I hope you love this soup as much as I do. 

                            “Chicken Soup with Gnocchi, Basil and Parmesan


Serves: 4 to 6

Ingredients:
2 small skinless, boneless chicken breast halves
3 tbs. olive oil
Salt & freshly ground pepper
1/2 yellow onion, chopped
2 garlic cloves, minced
4 cups (32 fl. oz) chicken broth
(you can use homemade chicken stock by clicking here)
1 can (14 1/2 oz) diced tomatoes
1 package (17 1/2 oz) potato gnocchi
1 cup (1 oz) baby spinach
1/4 cup chopped fresh basil
Grated Parmesan cheese for serving

Directions:
Preheat an oven to 375°F  Place the chicken breasts on a baking sheet, brush with 1 Tbs. of the oil and season with salt and pepper. Roast the chicken until opaque throughout, 18 to 20 minutes. Let the chicken cool to the touch, then shred into bite-sized pieces. In a large, heavy pot over medium-high heat, warm the remaining 2 Tbs oil. Add the onion and garlic and sauté until translucent, about 5 minutes. Add the broth and tomatoes with their juices and bring to a boil. Add the chicken and gnocchi and cook for 5 minutes. Remove from the heat, add the spinach and basil, and stir just until wilted. Season with salt and pepper and serve, passing the Parmesan at the table. You can serve with a salad of your choice and a crispy bread.

As Christmas is approaching I will be posting what I call “Christmas Around The World” or “Old World Santa’s.” It is like The Twelve Days of Christmas, but only Christmas around the world. These posts will start on December 13th and I will be posting one a day till Christmas Eve. They will contain a story about the traditions of that Country, the Santa’s and a Christmas recipe according to that country. I did these two years ago and my theme was “Christmas Music.” Everyone is always asking me if I am going to post my rendition of the twelve days, so this year I will be able to do it.. I look forward to these posts as I love Christmas as you my readers know, so this will be fun and I would like to get some recipes from other countries. So I hope to see you everyday from December 13 through Christmas Eve.     This soup is nutritious and filling at the same time, the perfect soup to keep us nice and warm in winter. I do love gnocchi too. Over here in the UK they are easy to find these days, now they even started selling a gluten free version too! Compared to 15 years ago we have so much more Italian food available on the English market. How about where you are? The only thing that I bring over from Italy is fresh Parmesan which I then freeze. It is far too expensive in England and we use lots of it in pasta and soups.

      Thanks for visiting and your comment. I just love this soup too. The Gnocchi is really so good, as I love the thickness of the pasta. Never saw a gluten free Gnocchi before, but there is a call for it now. Here on Long Island there are stores on almost every corner, but real Italian shops are in Italian neighborhoods. Different areas have different ethnic foods. So there are a few really good Italian shops here and that is where we shop. Now if we were going to NYC (Manhattan) the best place to go is Little Italy or Arthur Ave in the Bronx, which is a suburb of New York City. That is why I try to make my own of everything if I can. I wish I could just go back and forth to Italy, I can imagine the cheese there! I know you must like us use lots of grated and cheese of any kind. Yes the Christmas posts will be fun, but it always takes extra time due to the research I have to do. But I enjoy it and I hope that you will too. Have a good rest of the week...

    Like you my friend , my family love gnocchi and what better way than to have it in a soup with cheese .
    I will put this soup on the stove Friday , I will have to triple it , kids [4 is out of school , and family and friends dropping by , I can almost taste the soup now and you know I will make it with homemade stock .
    Take the time off my friend , I am thinking of the same .

      Thanks for your comment. There is nothing better than soup, pasta, and of course cheese. So glad that you love this post and the recipe. I would think you may have to triple this soup. Yes, trying to take some time for getting the posts ready for Christmas Around the World. I am also having the whole family for dinner on December 6th as it is my parents 64th Wedding Anniversary. So I will be busy..but also taking some time to put up my feet...

    WoW! Soupy Tuesday, what a GREAT idea! I do hope you will be continuing these kinds of post in January, after all, January is National Soup Month, lol...

    I've made Chicken soup hundreds, perhaps thousands of times, and never once have I included Gnocchi. Why oh why I do not know. (and I've put some unusual things in chicken soup, lol) Gnocchi is a perfect addition and of course the rest of the ingredients are a perfect balance. Thank you so much for sharing...

    I too am looking forward to your Christmas Around the World festivites. Another creative idea:) I do have one tiny suggestion for you. Your email address. It's a good idea to use contact info, however, if you want to slow down spam emails, you would be better off including your email like this: angellite13 [at] optimum [dot] net If you do it like that, then spiders and robots won't be able to pick it up and your email box will love you for it. Just saying:)

      So glad to see you here visiting..I truly miss you..I did fix the email address, I had no idea about that. Thanks dear friend, see that is why we need you to come back to blogging. I just have to fix the other posts now. Yes, I really am trying to do a blog post a day to get ahead of the game, for the Christmas Around the World. If you remember last year I had wanted to do this but couldn't due to my back went out. So this year I will do the 12 days. I know a lot of people have asked me if I was going to do this again. It is fun but you know takes a lot of time for the research.
      So happy that you have enjoyed this post on Soupy Tuesday. A friend asked me if I would post a soup recipe and the idea come to my head. I started it in November and yes I will be posting till at least March, so I will be doing it through soup month..(January)
      Yes, I am taking some time off as I want to get some of these Christmas post ready, and also my parents will be married 64 years on December 2. So I am having the whole family here for a celebration on December 6th. So as you can see I will not be just sitting around, but I will be preparing things. Thank you for your comment and the advice..

      Thank you for your comment...I totally agree, Gnocchi is good stuff and mixed in this soup it is really so good. It hits the spot on a cold day!   5. Great post, Dottie! I love gnocchi, it's fairly new to me and I forget how to pronounce it. It is not an easy thing to find around here. Your soup with it looks and sounds delicious, another great soup of yours to try!
