“Crab, Shrimp, and Corn Chowder Soup” To Keep You Warm On A "Soupy Tuesday"


Welcome to “Soupy Tuesday!” For those of you that are new to my blog…For the next few months I will be sharing a recipe for a delicious easy soup. As the days get colder, everyone enjoys a hot bowl of soup. We here on the East Coast had a Blizzard this passed weekend. I ended up with about 27 inches of snow with the drifts on Long Island. It took a few days to clear out. So this soup or any soup for that matter is like a welcoming friend. ******* I just want to "thank" all of you who have been sending well wishes and prayers to my mom who is in a rehab center for her back. She has been there since the beginning of December and her condition is getting better with her PT and OT, but she had a set back the weekend of the January 16th and was taken to the hospital for a blood transfusion. She is now back at the rehab and is trying to regain her strength. It is very slow going and my family thank you for your continuing prayers and thoughts. Also want to let you know that I will be only posting on “Soupy Tuesday” for a while. Thank you dear family and dear friends.**********
 


The soup that I would love to share with you today is called “Crab, Shrimp and Corn Chowder” Just as good as the satisfying chowders you find in restaurants along the New England coast, this creamy chowder can easily be made at home in less than an hour. Why not whip some up right now?

Crab, Shrimp, and Corn Chowder Soup

Serves: 6; 1 3/4 cups each

Ingredients:
4 slices bacon
1 medium sweet onion, coarsely chopped (about 1 cup)
2 cloves garlic, minced
6 cups Chicken Broth homemade or cans
2 teaspoons seafood seasoning
7 red potatoes or fingerling potatoes, cut into 1-inch pieces (about 2 cups)
2 cups frozen whole kernel corn
1 container (8 ounces) pasteurized refrigerated lump crabmeat
12 small shrimp, cooked, and deveined
1/2 cup heavy cream



Directions:
Cook the bacon in a 4-quart saucepan over medium-high heat for 5 minutes or until crisp. Remove the bacon from the saucepan and drain on paper towels. Pour off all but 2 tablespoons drippings from the saucepan. Reduce the heat to medium. Add the onion and garlic to the saucepan and cook until the onion is tender, stirring occasionally. Stir the broth, seafood seasoning, potatoes, and corn in the saucepan. Heat to a boil. Reduce the heat to low. Cook for 15 minutes or until the potatoes are tender, stirring occasionally. Stir in the crabmeat and shrimp, plus add heavy cream and cook for 5 minutes or until the mixture is hot and bubbling. Divide the chowder among 6 bowls. Top each with about 1 tablespoon bacon. Serve with a big green salad and a chunk of crusty bread…to get up every bit…Enjoy!

*****Ingredient Note: If you can't find sweet onions, regular white or yellow onions will work in this recipe.

    I had heard you guys got a ton of snow down there. My oh my I can imagine what it was like to dig out! My sisters live in Bohemia and they said they got about 26 inches too. We were lucky this time, whew!

    It's nice to hear your Mom is once again on the road to recovery. Marion had a couple of transfusions last year and I must say, it took a while for her to recuperate. I do believe she may have been quicker if she would have gone to rehab. Stubborn as she is, lol, she wouldn't go! We will keep you and your family in our prayers:)

    I can't think of any soup I would rather have right at this moment than Crab, Shrimp and Corn Chowder. It's as close to New England as I want to get this time of year, lol...Yours looks delicious, Dottie.

      Thanks for your visit and your comment. Yes, you guys got away with this storm..it was a coastal snow that is why we got so much. But it has been mild out this past week and a lot has melted.

      Louise, it has been so crazy with my mom. She is doing ok but very slow progress, just as you think she is on the road to recovery something else goes wrong. Tomorrow she will be going from the Rehab to the Hematologist by an ambulette. Then they will bring her back to the rehab. My dad and I will follow and I will be there to here what the Dr has to say. God bless Marion! She is one tough cookie...But thanks for your prayers and thoughts..

      I love this soup..I could eat it everyday..you can even use any shellfish or any thick fish as well, whatever your family likes better. It is easy and it is very comforting for sure.

      Hope that you enjoy the rest of the week and now I have to visit your blog. Didn't have time the other day. Love chocolate anything especially chocolate cake..

  2. We're still eating a ton of soup! Had some last night -- a cabbage, chickpea, and tomato soup with Indian spices. Don't know what we're doing for dinner tonight -- maybe this? Really wonderful combo of flavors. And very comforting. Glad to hear your mom is getting better. You've had some trying times lately. Anyway, great post -- thanks.

      Thanks for the visit...Yes, this is the time of the year for soup. I love the soup you described, the cabbage and the Indian spices must have been a wonderful change of pace. You will really love this soup I have posted. As I was telling Nee, you can use any seafood or any thick fish. A comfort food for sure.

    Glad to hear your mom is doing better , it's slow going , things will turn out fine . Your mom , dad and all your family is on our prayer list , as I always say , everything is possible with our 'FATHER."
    The soup looks delicious , I checked to see if I had the fixing everything but the crabmeat , pick some up tomorrow and it will be on . Stay safe and warm . Nee :)

      Thank you for visiting and your comment. Yes, you are right dear friend it is very slow going with my mom. We think things are going well and then something else pops up..My dad is still hanging in there but it is really hard for him. I agree Nee, everything is possible with God or "Father." Thanks for your prayers I know it will be because of prayers that will let my mom get better faster.
      So glad that you love this soup...it is really so delicious...you can actually use any type of seafood or a thick fish. Hope that you love it...you too stay warm and safe...
