"Ham and Mushroom Carbonara" For Wordless Tuesday.......


Welcome to “Wordless Tuesday!” Where there is just a mouth watering recipe or two which I know you have been waiting for…..


I hope that everyone enjoyed their Easter weekend! If you made a ham this Easter for dinner, I have an easy and delicious way to enjoy your leftovers. Mangia!


                                             
                                         "Ham and Mushroom Carbonara"


"Ham and Mushroom Carbonara"
Serves: 4
Preparation time: 10 minutes
Cooking time: 20 minutes
Total time: 30 minutes

Ingredients:
16oz linguine or spaghetti
1 cup cubed ham
1 cup sliced button mushrooms
1 cup cream
5 oz grated Pecorino Romano Cheese
2 eggs
A large pinch of chives
1 tbsp. butter
Salt and pepper to taste




Directions:
Melt the butter in a non-stick frying pan over medium-high heat. Add mushrooms, stir gently until cooked and tender. Remove and keep warm. Combine cream, eggs, and three quarters of the Pecorino Romano, chives, and a generous amount of freshly ground pepper. Place linguine/spaghetti into a saucepan add a pinch of salt bring to the boil then simmer until cooked. In another pan add the egg mixture, mushrooms, and ham. Toss in the pasta, over low heat until sauce thickens. Season to taste. Serve with remaining grated cheese.



***** Optional: You can also add peas, or chopped asparagus, or even broccoli….. 




++++ Wine pairing: A nice glass of Riesling: A semi-sweet wine with peach & citrus or a chilled glass of Moscato: A sweet white wine with fruit-forward flavors of peach, apricot and pear. Great wines for ham and pasta.

  1. Good morning Dottie , Now this is a great post to use up your leftovers and so tasteful . I think I will have the Moscato with mine .(clink ,clink) . Now you know I will add a little heat , excluding the seeds and a touch of garlic . Thanks so much for sharing and have a blessed week . :)

    1. Hi Nee, you are very kind and I am glad that you liked this recipe, yes, I thought you may want to add some heat and garlic would be good as well. That is what is great about this dish, you can use your imagination and add or take out whatever your family likes. That is why it is a good leftover dish. Plus the wine does add another layer of flavor. Thanks for stopping over...you have a blessed week ahead as well, Dottie :)

  2. Delicious carbonara Dottie! I hope you had a lovely Easter. I am just back from Italy and had a relaxing time. I have not done anything on my blog for a while now. My site has been having problems which I am still sorting out..nearly there though! Then I can start blogging again! I must say I have been enjoying some time away from the internet too which was good. My sister had a new baby so it was a special Easter for all of us! Hope all is well with you. Lots of love XX

    1. Dear Alida, thanks for stopping by. I am so glad that you were in Italy for a little rest with the family. I was worried about you, but I figured with Easter maybe you were there with family. Sorry that you are having problems with your site, hope it all gets fixed soon. I miss seeing your fabulous creations. Congratulations about your sister's baby.     Oh how I wish I had some leftover ham to make this delicious sounding dish. Marion and I wound up getting a bite to eat at a local restaurant for Easter. The only thing about eating out though; no leftovers!

    We had a nice day. It sounds like you had a wonderful day with family albeit a lot of fun work I'm sure:)

      So glad to see you....I know what you mean, no leftovers from your local restaurant, but glad that you and Marion had a nice time for Easter. Sometimes it is nice to enjoy a holiday quiet with a wonderful friend. My families Easter on the other hand was filled with people and food, which is nice as well, but busy. To me that is what big holidays are all about, making family happy and FULL!
      Carbonara is a recipe that my mom has made many a times. It is called the "Poor Mans Meal". I don't know if you knew this, but all the leftovers would be put into this dish years ago in Italy and it would feed many people. But a great recipe to add your own leftovers, and anything goes.

  4. Dear Dottie, This certainly is comfort food at its best. I enjoy the leftover creations sometimes better than the actual dinner. Isn't that true? I love leftovers!

    1. Hi Catherine, I totally agree with you, that sometimes the leftovers are better than your dinner. I find that sometimes certain foods taste better the next day, which is why I love leftovers. Yes, we had a lovely Easter Day, fun with the family, and lots, and lots of food..which means leftovers !
