As we are in the last full week of summer, blueberries will be soon out of season. This may be your last chance to enjoy the fresh taste of these very nutritious little berries. Check with your Farmers Market to see if they still have any left. You will be pleasantly surprised as to the sweet and tartness of this easy and awesome pie. You will feel like you are on a cloud as you taste a slice of this light and heavenly pie. Enjoy!
"Fresh, No Bake Blueberry Pie”
Ingredients:
1 9- inch Keebler Graham Ready Crust Pie shell or (reduced fat)
2 large Bananas
1 (13.5 oz) jar of Polaner Sugar Free Apricot Preserves
1-2 Pints of fresh Blueberries
1 container Cool Whip Whipped Topping or (Lite/Fat Free)
Directions:
This pie is so delicious and easy, it actually takes about 10 minutes to assemble. Start by cleaning the blueberries, wash and pull off stems and ones that are not good. Put in a bowl and set aside. Now take the Graham Ready Crust Pie shell and take off the cover, as well as pull up the sides of the aluminum a little bit. Take the two bananas and peel, clean, and cut into small rounds. Arrange bananas on bottom of graham cracker crust, in rounds. Put the 1 jar of Polaner Sugar Free Apricot Preserves in the bowl with the blueberries, and stir gently not to break down the berries. After all is mixed together now gently place the blueberries on top of bananas in the pie shell crust. Spread to the ends of the pie crust. Lastly, add the softened Cool Whip Whipped Topping to the pie and cover. (Plastic cover that comes with the crust) Now refrigerate till you are ready to use at least an hour. Serve with a cup of coffee or tea for a dessert to remember.
NOTE: If you have any left, you must use up the pie within 1 to 2 days tops, or it will go bad.

ReplyDeleteWhat a delicious dessert , saw your dish this morning , blueberries and bananas , this I got to make , Dottie I had all the ingredients on hand , I made my graham cracker crust as usual ( I forget to buy them at the store ) The perfect dessert for dinner tonight ,
I like the cool whip idea , my baby boy takes the meringue under his plate ;- D . Dear Dottie , there will not be any to save . They will be asking for another and I will make them , they are wholesome and healthy .

DeleteThank you for your lovely comment. I know this is amazing, I tell you I could eat the whole pie, that is how good and refreshing it is. This was a great idea to enjoy the blueberries and bananas. It is also a way to get some fruit into the kids. Plus the fresh berries instead of caned or cooked are a wonderful way to have a different texture in your mouth. I know that there would be none left to save or share. DeleteWhat a delicious pie Dottie! I love the idea of a fresh dessert you don't need to bake. Sometimes turning the oven on can be too much, especially if you are busy already with more cooking to do. But we all still fancy something nice from time to time!

DeleteThank you for your comment. I agree with you, this is a time saver and you don't have to bake it, plus you are getting all the antioxidants you need from the blueberries. It does look lovely on the plate and it is so refreshing. A perfect dessert for your family or even company. The step by step photos are nice, I love to show that more, but when you are alone it is hard to take the photos and show the steps. This time my mom helped me. DeleteNo bake desserts are the best, Dottie. However, blueberry season is long gone here in PA. I'll be saving this one for Marion anyway. She would LOVE it and soon the stores will have fresh blueberries again:) (I can dream:)

Hi Louise, Hope you are doing well, thank you for visiting and your comment. I agree, no bake dessert are the best! A time saver too. I know what you mean, our season is coming to an end soon, they still have blueberries in the grocery store but they are so expensive now. I buy once in a whole the frozen ones in a bag, but that would be not a good thing for this recipe. You really need the fresh. Have to save this one for next season. Glad that Marion would love it.
