Two Recipes For Your "Thanksgiving" Gathering, “Cranberry Sauce with Walnuts” & “Cran-Limoncello”
Welcome to Wordless Tuesday! Thanksgiving is one week away and everyone is planning their meals for “turkey day.” My thoughts go to cranberries. If you really think about it, the month of November is when we eat the most cranberries, since it is a Thanksgiving tradition.
I have two recipes this week for you to enjoy. “Cranberry Sauce with Walnuts," is really easy. You will be the most popular person at your Thanksgiving dinner when you place this on your table. Between the tartness, sweetness, and crunch of the walnuts, this will be a wonderful dish to add to your turkey dinner. The second recipe is called “Cran-Limoncello,”a drink that will enhance your holiday party.
“Cranberry Sauce with Walnuts”
Prep: 5 minutes
Cook: 35 minutes
Yield: 3 1/2 cups
Ingredients:
2 cups of sugar
1 cup of water
1 package (12 oz) fresh or frozen cranberries
1/2 cup of apricot preserves
1/4 cup of lemon juice
1/2 cup of chopped walnuts, toasted
Directions:
In a large saucepan over medium heat bring sugar and water to a boil. Simmer uncovered for 10 minutes. Stir in the cranberries. Cook until berries pop, about 15 minutes. Remove from the heat. Stir in preserves and lemon juice. Transfer to a bowl. Serve warm, at room temperature or chilled. Stir in walnuts just before serving.

“Cran-Limoncello”
Serves: 1 glass
Ingredients:
1/2 cup of seltzer
1/4 cup of Limoncello
2 tablespoons unsweetened cranberry juice
Ice cubes or crushed ice
One small strip of lemon peel, for garnish
3-4 cranberries, for garnish
Directions
Stir together the seltzer, Limoncello and cranberry juice. Pour into a glass filled with ice. Garnish with the lemon peel and some fresh cranberries.

DeleteGreat recipe! My mom used to make a similar sauce with walnuts, it was so good, unfortunately, I never asked how she made it. This just might cure the craving. Thanks!

ReplyDeletePam, that is so nice that you shared your mom's name with me. My birth name is Dorothy, but when I was young everyone teased me about the Wizard of Oz. Where was the lion and Toto the dog? So I decided to call myself Dottie, it just fits me so well, and have gone through most of my life as Dottie. Even though my parents still call me Dorothy....Have a wonderful day and enjoy the rest of the week....:)

DeleteOh I love cranberries and they are available everywhere now. I was so tempted today when I saw them at the supermarket. I want to make something up with them. Your Cran-limoncello is super! DeleteI agree, cranberries are every where. They are considered a "super" food. I love them, and try to used them in whatever recipes I can. Yes, I think the Cran-Limoncello is a fabulous drink, especially to get you in the mood of the season. Yes, Thanksgiving is BIG in AMerica. For many years now, a traditional Thanksgiving dinner is always at my brother and sister-in-law's house. So I don't cook but I do make the desserts, that is my forte. Now, Christmas Eve we do, so we each take turns. But our Christmas Eve, (being Italian) is the big day and night. We usually do the seven fishes with all the trimmings, and then ends with midnight mass. Then Christmas Day we go to my other sister-in-law house. Mostly we bring a lot of the leftovers from the Eve and Lori, my sister-in-law always makes a honey ham. So we are covered with the holidays till New Years. I know your Thanksgiving is at a different time in the calendar. thanks for visiting and for your comment. Hope that you as well have a good rest of the week.

Dear Dottie, I love cranberry sauce and there are so many variations to try. This sounds very good to add to the list. I love the lemon and nuts to give a nice crunch.
