"Chicken and Prosciutto Crepes" For Wordless Tuesday

Welcome to “Wordless Tuesday!” Where there are no more words, just a mouth watering recipe which I know you have been waiting for…..

"Chicken and Prosciutto Crepes"

Crepe Batter:
4 ounces of flour
Pinch of salt
1 medium egg
1/2 pint of milk
1 tbsp of olive oil
Oil to grease pan

Filling:
4 tbsp of butter
3 tbsp of flour
1/2 pint of milk
2 tbsp of Fontina cheese
2 chicken breasts; cooked & shredded
3 slices of prosciutto, shredded
Salt & pepper

Prep Time: 5 minutes
Cooking Time: 30 minutes
Oven Temp: 400 °F
Serves: 4-6 people

Garnish: Parsley

                                                                                               Directions:

Sift the flour and salt into a bowl. Make a well in the center and drop in the eggs. Start to mix in the eggs gradually, taking in flour from around edges. When becoming stiff, add a little milk until all the flour has been incorporated. Beat to a smooth batter, and then add the remaining milk. Stir in the oil. Cover the bowl and leave it in a cool place for thirty minutes. Heat a small frying pan, or 7inch crepe pan. Wipe over with oil. When hot, add enough batter mixture to cover the base of pan when rolled. Pour off any excess batter. When brown on the underside, loosen and turn over with a spatula and brown on the other side. Pile on a plate and cover with a clean towel until needed.

To make the filling, melt the butter in a pan. Stir in the flour and cook for 1 minute. Remove from the heat and gradually stir in the milk. Return to the heat, bring to a boil and cook for 3 minutes, stirring continuously. Add the cheese, chicken, prosciutto, salt and pepper and stir until heated through. Do not re-boil. Divide the mixture evenly between the crepes and roll up or fold into triangles. Place in baking dish and cover with aluminum foil. Heat in a hot oven for about 10 minutes. Garnish with parsley…Serve immediately!!!

Till Next Time………………………………...................

    1. Good evening, Nee,
I am sorry that I didn't get back to you sooner...So glad that you stopped by, you were the first. I know you will love these crepes. It really is not hard. If you ever made homemade Manicotti it is the same way to make them as these crepes. You can have sweet ones, and savory. Anything you put in them or on them is really yummy. Yes, you really have to try these. Blessings...Dottie :)

  2. These crepes look so tasty! In the spring in Italy they are also very popular with asparagus and ham or with fresh wild herbs. Prosciutto and chicken make a lovely meal and a very satisfying one too! Lovely Dottie!

    1. Hi Alida,
Thank you for stopping by...Yes, I have had crepes with many other ingredients including sweet treats. I love them with anything. And they are not that hard to create. I make homemade Manicotti, and this is the same way I do it. Light and very delicious. Seems you are correct, chicken and Prosciutto make a lovely marriage of flavors. Thanks..Enjoy..Blessings Dottie :)

    1. Hi Louise, Thank you for visiting. Glad you love the post and the crepes. They really are simple not to hard. What is harder is getting them the same size in the pan. But that takes practice. These are really good and yes it would be a lovely Valentines Day meal for that special someone.. . There is just something about the flavor of the chicken and the Prosciutto that is like a marriage made in heaven. I will be looking forward to your email....Blessings Louise Dottie :).
