“Ritz Parmesan Chicken” & “Heirloom Tomato & Zucchini Salad” For "Wordless Tuesday"

Ritz Parmesan Chicken

A quick dip in a mayo-lemon juice mix and a roll in crushed Ritz crackers could make this Parmesan chicken breast recipe a new family favorite. A glass of wine would be a lovely addition to this dish; you can add a Red Pinot noir or a light Merlot, a Sangiovese or even a Chianti….



Ingredients:

1/4 cup Mayonnaise (Low Fat if you choose)
1 Tbsp freshly squeezed lemon juice
25 Ritz Crackers, finely crushed (about 1 cup)
1/4 cup Parmesan grated cheese
2 tsp. dried basil
2 tsp. dried parsley flakes
4-5 boneless chicken breasts (depends on size)

Directions:

Heat oven to 400°F. Mix mayo and lemon juice in medium bowl. Combine cracker crumbs, cheese, basil, and parsley in separate bowl. Dip chicken, 1 breast at a time, in mayo mixture, then roll in crumb mixture until evenly coated. Place on baking sheet sprayed with cooking spray. Bake 35-40 min. or until done (165°F)

“Heirloom Tomato & Zucchini Salad”

Tomatoes give this salad a juicy bite. It's a great use of fresh veggies from your own garden or the farmers markets.

Servings:12  Prep/Total Time: 25 min.

Heirloom Tomatoes

Ingredients:


7 large heirloom tomatoes (2-1/2 pounds), cut into wedges
3 medium zucchini, halved lengthwise and thinly sliced
2 medium sweet yellow peppers, thinly sliced
2 medium sweet onions, sliced thinly
1/3 cup cider vinegar
3 tablespoons olive oil
1 tablespoon sugar
1-1/2 teaspoons salt
1 tablespoon each minced fresh basil, parsley, and tarragon



Directions:

In a large bowl, combine tomatoes, zucchini, onions, and peppers. In a small bowl, whisk vinegar, oil, sugar and salt until blended. Stir in herbs. Just before serving, drizzle dressing over salad; toss gently to coat.

Yield: 12 servings (3/4 cup each)

      Thanks for your comment...you are so sweet....Yes, the chicken is crunchy especially with those Ritz crackers....My brother brought me some heirloom tomatoes on Saturday, and let me tell you they were awesome. I could eat them like an apple, sweet, juicy, and what flavor.
      Before the season runs out I had to get another tomato dish on the post. These next few days are supposed to be really hot here so this will be a perfect light meal...Just what I thought...Thanks for stopping by and have a wonderful week...

    Love the crunch that Ritz give chicken ,,,HMmmmm good .
    I will have to try the Mayo ... I used cream cheese . I used diced jalapenos diced ( remove the seeds and ribs) .
    I do so agree about the heirloom tomatoes , they are one of our favorites , we grew three kinds this year . The salad looks amazingly good and the two go together so well . I click my glass of Sangiovese to you , go so well with chicken and the other white meat (PORK) .
    The earthquake in Napa Valley wine country , we was so worried about my hather-in-law and his wife , as you know they have a vineyard and winery there , (Ferrari Carano) still feeling some aftershocks but they are OK ... some clean up .

      Thanks for your comment, you are so cute...I love the Ritz and the Mayo is a nice flavor. Never tried cream cheese, will try that next time...So glad that you grew 3 types of tomatoes, these heirlooms are amazing....especially homegrown. Yes, I thought the chicken and tomatoes are an amazing combo..they blend together nicely and what textures and flavor...
      I was thinking about your family..I remembered they had a vineyard in Napa Valley.Glad that they were ok, a little cleaning up is not a big deal..as long as everyone is well. I know it was horrible to watch on TV, I can imagine if you were actually there.

      Thank you for your comment, yes that chicken was crunchy, finger licking good. You are the great cook, I try, I just take simple foods and make simple meals, like my mom did with the freshest ingredients. As you know the tomatoes are in full bloom now, we have to enjoy them while they last.   4. Dear Dottie, These recipes are classic. I love using crackers as a coating. They already have the salty/sweetness that is so good; just as a few of your own touches and you have a delicious coating.
    The salad is a perfect addition to this classic chicken recipe and is a great way to use the fresh produce that is abundant now.

I thought the tomato salad would be perfect with the chicken. Let me tell you it was...simple, delicious, and easy! What is better than that on a hot summer day!
