"Coconut Shrimp" Recipe For “Wordless Tuesday!”

Welcome to “Wordless Tuesday!” Where there are no more words, just a mouth watering recipe which I know you have been waiting for…..

 

"Coconut Shrimp"

Ingredients:
1 lb of uncooked shrimp peeled, de-veined, with or with out tails.
Peanut oil (for frying)
1/2 cup of ice water
1/4 cup of cream of coconut (you can find this in the drink mix isle)
3/4 cup of flour, sifted
3/4 cup of Panko (Japanese breadcrumbs)
1/2 cup of shredded unsweetened coconut
Salt and pepper to taste



Directions:
Line baking sheet with parchment paper. Mix ice water, cream of coconut and flour together in a bowl, add your salt and pepper to your taste, this is your tempura batter. (You can also buy in the grocery store pre made mixes of tempura batter) Next, mix in a shallow bowl the Panko breadcrumbs and the shredded coconut together. Set aside. Put oil in pan and heat up, so you will be ready to fry the shrimp. Working with one shrimp at a time, dip in tempura batter, then coat the shrimp in the Panko with the coconut and place on a baking sheet. You can have all the shrimp ready to fry and can be prepared up to 4 hours ahead of time. Cover and chill. Now once oil is heated, place very carefully in hot oil and fry till golden brown. Can be served on top of a mixed green salad or also as an appetizer with a dipping sauce or ginger vinaigrette.

"Apricot Preserves Dipping Sauce"


1/3 cup low-sugar apricot preserves
1 teaspoon spicy brown mustard
2 tablespoons coconut milk
Mix all 3 ingredients together in a serving bowl



French Chardonnay or an Italian Pinot Grigio wine are great pairings for this fabulous dish.

  1. Good morning Dottie ,love shrimp with coconut and your dish is divinely delicious , I also like your choice in the pairing of wine , I like the Italian Pinot Girgio , it's deeply aromatic and smooth to the taste buds .
    Michael Castaldo is not a personal friend of mine , but I love his music and he do have a beautiful voice and of course I will vote for him and I am reaching out to all my family and friends .     Thanks for your visit....I also am a shrimp lover. I enjoy mostly shell fish. I had gone to a restaurant, and they served coconut shrimp over a fabulous tossed salad. So when I went home, I decided to try to re-create the dish. Plus the Pinot Grigio and French Chardonnay are light, and they bring out the flavor of the coconut with the shrimp. You don't want to use regular Chardonnay because it is to oak flavored, and too heavy with the light fish.

  4. Dear Dottie, This is one of my daughters favorite meals. The apricot dipping sauce is a perfect dip for the shrimp.

    Those shrimps look so crunchy and soo tasty! We like shellfish in my family and we have it as a treat every so often. It is something for special occasions.
    I have looked into Michael's page, he looks very Italian indeed and he is a very good singer!

    Thanks for the visit...Yes, they were very crunchy and everyone I think enjoys shrimp in some form or another. I am glad that you liked Micheal's music, he is a fabulous singer, and I really enjoy listening to him. Yes, the appeal is that he sings in Italian, but also in English. He came from the same area in Calabria that my mom's, mother's (my grandmother) family came from in Italy.
