“Garbanzo, Tomato, & Cilantro Salad with Lime & Chile Dressing” To Celebrate "Cinco de Mayo"

Welcome to “Wordless Tuesday!” Where I have a fabulous and delicious recipe or two waiting for you to try ….. 



Happy Cinco de Mayo or the fifth of May. This day commemorates the Mexican army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations. Cinco de Mayo traditions include parades, mariachi music performances, street festivals, and traditional foods such as tacos and mole poblano. Some of the largest festivals are held in Los Angeles, Chicago, Houston, and New York.

One of my recipes today is a wonderful and nutritious dish that is perfect for a celebration. The flavors are just the right amount of spiciness to let your taste buds know that Cinco de Mayo is a time for a Fiesta! So try my recipe and under this recipe is a “Margarita” drink that you will love to go with your salad.…Olé!!



 “Garbanzo, Tomato and Cilantro Salad with Lime and Chile Dressing

Ingredients:
1 can garbanzo beans (chickpeas), rinsed well
4-5 tomatoes, diced in 1/2" pieces
1/2 cup green onion, sliced
1 cup (1 large bunch) cilantro, washed, dried and chopped coarsely with chef's knife or food processor


Dressing:
2 Tbsp fresh lime juice
2 Tbsp extra-virgin olive oil
1/4 tsp ground chipotle chili powder (You could substitute hot sauce if you don't have ground chipotle)
1/2 tsp mild chili powder
1/2 tsp ground cumin
1/2 tsp onion powder
Zest from one lime
Salt & fresh ground pepper to taste


Directions:
Drain beans into colander and rinse until no foaming remains. Let drain well. Mix dressing ingredients, then put beans and dressing into a container with a snap-on lid and shake a few times. Let beans marinate in dressing one hour or longer. Dice tomatoes, place in colander with a small amount of salt and let tomatoes drain 10 minutes while you dice onions and chop cilantro. Combine marinated beans with dressing, tomatoes, green onion, cilantro, and then stir gently until well combined. Season with salt and pepper to taste and serve immediately. Serves: 4

    What a great dish for Cinco de Mayo , love the foods , and I will definitely make this dish and as you know I am going to put some heat in it , just perfect .
    The Margaritas will go well with this dish , I always blend mine in the blender , I think it looks and taste better (giggling ) but hey that's just me .
    I understand how busy you are , but I hope your weather is nice . I do so hope your dear family is well and my prayers is with you . I put you and your family of my groups prayer list and remember dear Dottie any and everything is possible with the Father if you only believe .

      Thanks for your lovely comment dear friend...Yes, I figured you may want to put in some (heat) caliente. You can't have a Cinco de Mayo fiesta without a Margariata! So glad that you enjoyed this recipe...I know we are all so busy, but I have been really busy this past week...Yes, Nee the weather is really nice and getting warmer...The sun has been out but today it is overcast and we may have some rain. I hope that your weather is nice too. I know I saw that you down there were getting a few storms about a week or so ago. Thank you Nee for your prayers and at this time everything is holding steady with the family. You are so kind to think of me...I know, I also thank God everyday and I know it is possible and to "Believe" I am a very religious person. I am praying for your family as well.   2. Oh I had no idea about the Cinco de Mayo fiesta! Now I know. I love your chickpeas meal! As they take quite a long time to cook I usually make them in a batch and freeze them. They are so good for you and so filling. I am trying to eat healthier for spring. This is usually the time when we feel more tired with the changing season so a boost with good and nutritious food is always a good idea.

      Thank you for your visit and your comment...Yes, here in the states Cinco de Mayo is a big deal...I think we take any day to make it a holiday and have fun. Chickpeas are really so good for you and they are even more delicious in a good salad. When I was young and still at home, I hated chickpeas...never liked the flavor and the texture I thought was "gross" in the words of the 60-70's..Now I love them....Even Hummus...They are very filling, you are right, dear friend, these just give you a boast in Spring or all year round. You can't celebrate your fiesta without a Margarita! Glad that you like this recipe and post...I wish you an awesome rest of the week as well...
